Recepies for Red Jollof Rice

  • 1 kg goat meat
  • 225g fresh chillies
  • 1kg fresh tomatoes
  • 2 large onions
  • 2 clove garlic
  • 1 small tin tomatoes puree
  • 1 teaspoon thyme
  • 2 teaspoon chopped part minger leaves
  • 2 onions sliced
  • 1 teaspoon curry
  • 1 pint ground nut-oil
  • Salt to taste

How you make it
  1. Wash and disjoint the goat meat, cut into 10-12 pieces,
  2. Season with salt and the sliced onions, thyme, curry and cook for 30-40minutes until tender,
  3. Heat up half of the oil in a pan and fry the cooked goat meat until brown but not too another pot, heat up the rest of the oil and fry the ground onions, chillies and tomatoes for 20 minutes, until fairly dry.
  4. Add the tomatoes puree and some stock, if required.
  5. Stir thoroughly and add the fried goat meat pieces.
  6. Cook and simmer gently for another 10 minutes, stirring frequently until well blended.
  7. Drain off excess oil that rises to the top and finally stir in the chopped part minger leaves.
  8. Remove from fire and serve with hot rice and fried plantain.
